"Good For You" Raw Slice
I got this recipe from M at work, she made them for our customers at the Green Bean that are raw foodies, vegans, gluten and/or lactose intolerant and I instantly fell in love with them. They are so tasty and wholesome and completely satisfy that chocolate craving whilst actually being good for you. She made them into small round biscuits after rolling them and put Goji berry flowers on top, however I did not have any cookie cutters so pressed into a tin to make a slice instead...delicious!!
1 x cup sultanas
1 x cup coconut
3/4 x cup cacao powder
1/4 x cup coconut oil
2 x Tbs Goji berries
rind of an orange (non-waxed)
1/2 x cup cacao nibs
1 x cup almonds
In food processor blend sultanas and coconut to make mushy mixture, add all other ingredients except nibs and almonds and blend until smooth. Finally add nibs and almonds and process enough so that there is still some texture in the mix. Line biscuit tin with baking paper and press mixture so it is flat, either cut into cookies or leave as slice. Refrigerate for half an hour and enjoy. I'm told it freezes well.
