Lemon Coconut Chia Seed Loaf
Well exams are over and the mid-year break is upon me, which means I can get back into the kitchen and bake something, it certainly is great to have the oven going on a cold day filling the house with delicious aromas rather than having the heater on. The only problem was I didn't really feel like leaving the house to get supplies so this vegan loaf was born. I do love a citrus flavoured dense cake, preferably not to sweet so this was right up my alley, might not be up yours but you could probably add some extra sweetener (agave, extra dates, mashed banana) or a cream cheese coconut icing to jazz it up.

2/3 can Coconut cream
2 lemons juice & rind (make sure the lemons are not waxed, go and grab a couple from your neighbour)
1 cup SR wholemeal flour
2/3 cup oats
6 dates chopped
1/3 cup chia seeds
maple syrup for glazing

Mix all ingredients together and place in loaf tin lined with grease proof paper, my crappy oven took one and a half hours to cook this, yours probably won't take that long.
All ingredients as per usual are organic.
