Give 'em the Eggplant Finger
I bought some beautiful little eggplants and wanted to make a salad of some description...so I thought oregano, I thought feta and I thought brown rice...does that make it a little bit Greek? Whatever you call it, it was definitely delicious! 
I cut the eggplant fingers length ways and fried them in olive oil with oregano
I also cooked the vegetarian sausages with them. 
I cooked some brown rice, washed some spinach, chopped up some beautiful juicy red Roma tomatoes and crumbled some feta, squeezed some fresh lemon juice and voila a beautiful healthy meal that ticks all the boxes both nutritionally and deliciously....mmm that's some good tucker
