Spicy Saffron Picnic Salad
Picnic at King's Park tomorrow with some friends I haven't seen in some time, bring something to share. 
Here's my offering. 
Saffron rice (I cheated and bought an extra one when I got Indian take-away)
half head of cauliflower
100g chopped pumpkin
4 x fresh chilli (optional) leave whole for roasting
1 x tsp cumin
1/2 tsp each of curry powder, ground coriander & black mustard seeds
1/4 tsp turmeric, celtic sea salt
2 x Tbs sesame seeds
3 x Tbs pumpkin seeds
1 x Tbs chopped fresh parsley (coriander would also be good)
organic olive oil
1/2 cup currants or sultanas
juice of half a lemon

Chop cauliflower into small florets, peel and chop pumpkin into about the same size pieces, toss in spices, chilli, seeds and olive oil, roast until tender and crispy around the edges.
Mix vegetables, rice, parsley and currants together and squeeze over lemon juice, I thinly sliced one of the chillies and mixed through and put the others on top for both decoration and warning that there is chilli in the salad. Enjoy with friends and grab a ray of sunshine.
