Chocolate, Almond and Sesame Fudge
A friend gave me this recipe, I am not sure where she got it from but I tried it at her house in a more 'fudge' like form, ie pressed into a tin and cut into squares. So moorish, so energy dense. 
I decided to roll them into balls instead and tweaked a few ingredients, do I ever just follow a recipe...?
I've made them twice so the first lot of tweaks are in red and the second lot in green (confused yet?)
  Ingredients:
  • 250g sesame seeds (300g) 
  • 200g almond meal half tsp ground cinnamon (tsp cinnamon) 
  • 4tbsp flaxseed (2 x tbsp flaxseed oil, 3 x tbsp chia seeds, 2 x tbsp shredded coconut, 2 x tbsp raw cacao chips) 
  • 4tbsp tahini 
  • 2tsp organic virgin coconut butter (didn't use) 
  • 25g xylitol (tbsp raw sugar) 
  • 150g plain unsweetened carob bars or dark chocolate (75% cocoa) (100g Green and Blacks dark chocolate and 50g or Green and Black's white chocolate) 
Method: 1. Blend sesame seeds and flaxseed until finely ground (I didn't grind them second time around). Add almond meal and cinnamon. 2. In a pan melt together the tahini, coconut butter, xylitol and chocolate. 3. Stir in the almond and seed mixture and beat well to form a sticky paste 4. Press the mixture into a lightly greased and lined tin (apporx 30cm by 20cm) and chill in the fridge for 2-3 hours until firm. Cut into small bars to serve. Keeps in the fridge for up to 1 week or freezes for up to 1 month
Really great for a snack an hour before going for a run or hitting the gym.

these balls look amazing - I love these sort of truffles and sesame would add great flavour

There should definently be some kind of warning on these, they are so addictive :)
