Broccoli Quiche Loaf 

Driving home late one night, hungry, I started to think what was in my fridge that might be able to make dinner.
What I had in the fridge
  • a head of broccoli
  • a tomato
  • small cube of edam cheese
  •  filo pastry
  • 4 x eggs
  • romano cheese
I lined a loaf tin with filo pastry and filled it with the whole head of broccoli chopped into large florets. I then added chopped tomato and pushed some cubes of cheese into the mix, covered with beaten eggs and cooked in the oven for about half an hour at 180 degrees, 5 minutes before taking out of the oven I topped with freshly grated romano cheese. Nice and easy, tasty and healthy.
