Best Big Breakfast 
Just what you need on a weekend morning 
2 x field mushrooms
2 x big handfuls of baby spinach
half a punnet of cherry tomatoes
half a tin of 4 bean mix, rinsed
juice of half a big lemon
half an avocado
organic evoo  
fresh ground salt & pepper to taste

Slice field mushrooms and fry in a little evoo, add cherry tomatoes so they have time to collapse. Once mushrooms are ready toss in beans, baby spinach and juice of lemon, allow spinach to wilt and beans to warm though. If cherry tomatoes haven't collapsed give them a gentle push to release their juice. Serve with chopped avocado and salt & pepper is desired.
With the other half of the lemon I mixed it with equal parts apple juice and filtered water. My new favorite juice.
