Lip-Smacking Pepita and Couscous Salad

I had accidently bought some more pepitas (pumpkin seeds) when I already had a jar in the cupboard. What's a girl to do? Make a throw together pepita salad of course!! I love dry frying pepitas, I love the sound that they make when they pop, I love their puffyness.

1 x bag rocket leaves
1 x punnet grape tomatoes
5 x mushrooms
1 cup couscous
1 cup pepitas (or more)
3 x cloves pickled garlic (or less of fresh)
1 Tbs pine nuts
extra virgin olive oil
splash red wine vinegar

Method in the Madness
Dry fry pepitas until they start to pop and brown on low heat. Once done put them into a bowl so they continue to pop as they cosy up to each other.

Put couscous into jug/bowl and cover with about one and a half cups of boiling water, cover with tea towel to steam.
Slice the mushrooms and fry in a little olive oil.
Roughly chop the rocket, finely chop the garlic and pinenuts together. Toss together to make a large cut pesto.
Cut tomatoes in half, mix in with rocket mixture and toss through a splash of olive oil and red wine vinegar.
Fluff couscous.
Mix all ingredients together and leave to stand for a couple of minutes to let flavours marry.
